Choco Making
The team works chocolate with a maître chocolatier.
What it is
Do you love chocolate, or do you enjoy tasting it without being confident in a kitchen? Either way this is for you. Guided by a professional maître chocolatier, teams make pralines: tempering, moulding, filling, decorating. Chef hats, aprons and workshop equipment are provided.
You start from the simplest shapes and work up to the fillings. At the end everything gets beautifully wrapped and taken home, a tangible reminder of a day’s collaboration.

When it makes sense to choose it
It works well when you need something short with no barriers to entry, where nobody can feel inadequate. Almost everyone likes chocolate and the technical movement is learned by watching.
It works well as a seasonal activity too, because what comes out is already a wrapped gift.
It works less well if you’re after a real contest. Here you learn and you taste; the competitive side is secondary. If you need a competition with judges, the road is Cake Design.
What it looks like
A video says in thirty seconds what a page explains in a thousand words: how loud it gets, how much laughing there is, what the hands are doing.
How it actually works
First you watch. The chocolatier shows the complete process on one praline, and at that point it’s clear where the difficulty sits: chocolate has its own timings and won’t be rushed.
Then the teams work in parallel on their own, planning, making and refining their pieces. That is where the communication, the problem solving and the collective decisions actually happen. While the work goes on, so does the story of chocolate: where cocoa comes from, which countries produce it, and why Belgium built a reputation on pralines. The day after, the box on somebody’s desk is the reminder.

Do you need to know how to cook?
No. There’s no cooking and no recipes to memorise: you follow the master step by step.
How long does it take?
It’s one of the shortest formats in the cooking family, and it sits comfortably inside an afternoon or an evening.
Can it be combined with something else?
Yes. It’s often combined with Cake Design to build a whole day around desserts, especially around the holidays.
When what surfaces deserves an afterwards
An activity surfaces a great deal about how a team communicates, decides and works together, and sometimes what surfaces deserves more time, more depth and a method.
